My Apologies

I must apologise for my absence... after my migraine on Saturday I haven't much felt like using the computer... and the hospital rang me with crappy news. My protein is still too low so they ordered me to get to my GP for further blood tests. Which have left me with a big gammy bruise on my right arm because the nurse SUCKS at taking blood.

In cooking news... I'm on my Easter holidays so I have been experimenting with different recipes this week. Monday, I cooked creamy tomato soup- delicious!!! And my dad liked it too... and he is very fussy about food!
Tuesday, it was homemade pizza. It was delicious... but I put too much sauce on the pizza base and when I took my first bite it got all over my bottom lip and the burnt the hell out of it. I had a big minging blister on my lip for days!
Wednesday, I went to NCI (National College of Ireland) for Open day (more on that later) so I didn't make lunch. Instead we (my dad and I) eat in a cafe... lovely chicken soup... yummy!
Thursday, I made Croque Monsieur... absolutely yummy!!! It's a fried ham and cheese sandwich. I'm sure that it's really fattening... but because I'm trying to gain weight... I don't care!!!
Friday, I made the creamy tomato soup again because Mam and sister were at home and they wanted to try it... but I eat too much and belly was bursting so I had to take Gaviscon (tm... blah blah).
Saturday, I made chicken and ham risotto... it is delicious and it is so easy to make... it's very very tasty!

NCI Open Day- It was great. Dad drove me up (he works from home). I didn't get to stay very long but I managed to catch a talk on Accounting and Financial services. I went in wanting to study Accounting and came out realising I want to study Financial services. No one else showed up for the talk so I got to talk one to one with the Professor and she was really nice.
It's such a cute little college because it's so small and all the professors get to know the students really well. Which is great for me with my condition and all.

I've finished two fantastic books this week. The first one by Sophie Kinsella called "Shopoholic and Baby"... if you haven't read this series go start now... it is brilliant. The second one was by the funniest woman on the planet Marian Keyes "Anybody Out There"- You should read her books too... I never laugh when I read books but I always do when I read hers.
By the way did you see Marian Keyes on Tubridy Tonight? I haven't laughed so hard in a long time... she is hilarious!

I love Golf! I know that seems strange for a teenage girl but I love it. The Masters are brilliant. Tiger will probably end up running away with it... but come on Padraig Harrington! He is in with a chance... only 2 behind the leaders. Hahaha! Annoying Phil Mickelson is playing crap!!! Hardy hahaha! I can't wait to see his face when he has to put the green jacket on the winner... mwa hahaha!
